| olive oil |
| 1 large onion, thinly sliced |
| 1 large bell pepper, thinly sliced |
| 3 cloves of garlic, thinly sliced |
| 1 teaspoon ground cumin |
| 1 teaspoon paprika |
| 1/8 teaspoon cayenne pepper (or more) |
| 28oz of plum tomatoes with juice, coarsely chopped |
| 4 ounces feta cheese, crumbled |
| 4 large eggs |
| chopped cilantro |
Instructions
- Preheat the oven too 200C.
- Thinly slice 1 large onion and 1 bell pepper
- Cook the above in a large skillet over medium low heat until very soft, for about 20min
- Add garlic and cook 1-2min until tender
- Stir in and cook 1min:
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/8 teaspoon cayenne
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- Pour in 1 can of chopped tomatoes and simmer until thickened, about 10min.
- Stir in 4 ounces of crumbled feta
- Transfer mixture to an ofen-safe dish
- Gently crack 4 eggs into dish over mixture
- Season with salt and pepper
- Bake in oven until eggs are just set, about 7-10min
- Sprinkle with cilantro
