Ingredients
olive oil
1 large onion, thinly sliced
1 large bell pepper, thinly sliced
3 cloves of garlic, thinly sliced
1 teaspoon ground cumin
1 teaspoon paprika
1/8 teaspoon cayenne pepper (or more)
28oz of plum tomatoes with juice, coarsely chopped
4 ounces feta cheese, crumbled
4 large eggs
chopped cilantro

Instructions

  1. Preheat the oven too 200C.
  2. Thinly slice 1 large onion and 1 bell pepper
  3. Cook the above in a large skillet over medium low heat until very soft, for about 20min
  4. Add garlic and cook 1-2min until tender
  5. Stir in and cook 1min:
    • 1 teaspoon cumin
    • 1 teaspoon paprika
    • 1/8 teaspoon cayenne
    • 3/4 teaspoon salt
    • 1/4 teaspoon pepper
  6. Pour in 1 can of chopped tomatoes and simmer until thickened, about 10min.
  7. Stir in 4 ounces of crumbled feta
  8. Transfer mixture to an ofen-safe dish
  9. Gently crack 4 eggs into dish over mixture
  10. Season with salt and pepper
  11. Bake in oven until eggs are just set, about 7-10min
  12. Sprinkle with cilantro
